Xavier Cussó develops various complementary lines of research.
The first focuses on the history of food, especially the theoretical and empirical analysis of the Mediterranean diet and the great changes experienced during the last two centuries in Catalonia and Spain in the context of the nutritional transition model. It has recently been extended to developing countries and the analysis of food sovereignty in historical perspective.
The second line, from the perspective of ecological economics, analyzes and compares, from the 19th to the 21st century, energy and nutrient balances, the evolution of social metabolism, agricultural systems and their sustainability, the landscape and the associated social inequalities.
Finally, he has recently begun to work on the evolution of the living standards of the Spanish and Barcelona working class over the last two centuries.

Therefore, his research deals with questions relating to the dynamics of capitalist accumulation, the social structures of accumulation that define it, and the political economy of development.

Since 2010, the contributions have been inscribed in the theoretical framework of industrial districts, the analysis of competitive advantage - based on the study of foreign trade and product brands - and the relationship between the figure of the entrepreneurial immigrant and the innovation transfer.
